Sorry to hear that you are getting "cold feet" about your photographer. As a Professional photographer I understand that your wedding is the BIGGEST event to date for you and this a is a big decision. Your photos and video will be the only thing you'll have to remember that important day in the years to come.
I can tell you this, if you decide you want to book another photographer you will no doubt loss the deposit you have paid your current photographer. Some photographers will sell the images with a photo release which will allow you to do what you want with your images after the fact. But the resulting images will only be as good as the original you had to work with. If you need someone to edit your photos (because your photographer did not) you might be able to locate someone to do that but that is going to cost you additional $$$.
I assume you had seen a few photographers before making a decision on the person you choose? What was the reason for you to decide on booking this photographer?
Here's some things to consider. If you don't have confidence in your photographer it could make for a very stressful day, which in turn, may result in less than optimum photos. Remember, one reason couples choose a photographer is to capture the full essence and joy of the day. You and your spouse-to-be will want to be relaxed and enjoying your special day, not worried about the outcome of the photos.
